Su Casteddu Rognoni is a Sardinian semi-cooked cheese made from sheep’s and cow’s milk, produced in the Barbagia region of Ollolai, which embodies all the passion and skill of Sardinian shepherds.

 

 

It is cylindrical in shape, with a diameter of about 25 cm and weighing between 4 and 5 kg. The rind is naturally light brown in color, with a slightly rough texture. The paste is firm and straw-colored, with evenly distributed irregular eyes.

The flavor of Su Casteddu is intense and spicy, with hints of dried fruit.

It is produced following artisanal methods and aged at least 6, up to 12 months, a period during which it acquires the organoleptic characteristics that make it a high quality cheese.
