Absolute, blue-veined delicacy: 100% buffalo milk. An unexpected and appreciated gift: vivacious, intense, aromatic and sweet flavour, thanks to the Moscato lees with which it is paired. The grey, elegant and dry rind is ribbed on the faces while the side surface is smooth.

 

Here is another buffalo blue cheese aged in yellow Muscat marc used in the production of Passito Bergamasco, which will add a sparkling touch to your cheese counter and intrigue your customers.

The paste of Blu di Bufala Muscat has a crumbly yet creamy texture: it breaks when cut, but is also pleasantly buttery. It has a diffuse and well-distributed blue and grey hue.
On the nose, the most pronounced aromas are those of pomace, of fermented wine, which combined with the sweetness of buffalo milk in the mouth give a surprisingly sweet taste.

The flavour is intense, savoury and pleasantly fatty, never pungent, with aromatic notes of dried fruit.
Blue Buffalo Muscat was awarded the ‘Supergold’ medal in 2019 at the World Cheese Festival in London, one of the most important international cheese festivals.
