Revisited, blue cheese, made from buffalo milk. Dry and amber-coloured, the external parallelepiped shape encloses a straw yellow coloured cream with deep blue veins, featuring an intense aroma and strong flavour, as well as delightful “sweetness” typical of buffalo milk.

 

A blue cheese for lovers of strong flavours, this cheese will certainly meet the approval of your customers at the cheese counter.

Made from whole, pasteurised Mediterranean buffalo milk, exclusively from Italian herds, it encases a heart of mould with blue-green streaks and comes with a combination of flavours ranging from the peculiar sweetness of buffalo milk to the pungent taste typical of blue cheeses.

It has a minimum maturation period of 90 days but can also reach 6 months, determining the structure of the paste: creamy in the first case and more crumbly as time passes.
Square-shaped with a high heel, the rind, which is not edible, is wrinkled and light straw-coloured.
Over the years, this cheese has won several international awards including, in 2019, the silver medal at the “Mondial du Formage” in Tours (France) and the gold medal in 2017/18 at the World Cheese Awards in London.
