Beer and massages… for 6 months? The dream of many. Living this dream is a cheese that rests in vats of excellent artisanal red beer and is also massaged over and over again so that its texture, to the nose, is bold, and to the palate, very balanced. Exquisitely “drunk”.
Ubriaco alla birra: a wheel of cheese aged for at least 6 months, with a semi-hard texture that matures inside vats of artisanal red beer produced in the Treviso region. The product is massaged multiple times to ensure that the beer penetrates deep into the cheese. The characteristic cereal note of the beer is clearly evident on the nose and distinctly, but not excessively, on the palate. Excellent when paired with both fatty and lean cured meats, for enhancing risotto creaminess, and for creative charcuterie boards.
